Disclaimer, this is my personal experience, MCAS does vary from person to person and there are a variety of severities, all the way up to anaphylactic reactions.  MCAS stands for mast cell activation syndrom, this is a condition where the mast cells responsible for protecting the body from pathogens are overactive and respond oftentimes without an obvious trigger, releasing histamine and other signals to activate your immune system. This can cause a wide array of symptoms, but the best way I can describe it as someone who has it, it feels like I can have an allergic reaction to anything at anytime, regardless of if I’m actually allergic and even if I’ve never had a reaction to that particular thing before.
