Perfectly seared lamb rack with a pistachio crust. So tender and flavorful and of course a show stopper!  Pistachio-Crust Lamb Rack  Sauce: 1 cup Cabernet 2 cups beef broth 5 tablespoons butter divided  Rosemary sprigs Thyme sprigs 1/2 shallot minced 3 garlic cloves sliced Salt Pepper Method: add 1 tablespoon of butter into a saute pan and melt it. Add in your shallots and cook for about 3-5 minutes on medium heat. Add in your sliced garlic and cook for another minute. Now deglaze with your wine, add your thyme and rosemary and let this cook until half of the wine has evaporated. Now go in with your beef broth and bring to a boil. Remove your thyme and Rosemary sprigs and go in with 4 more tablespoons of butter a couple of chunks at a time as you’re constantly whisking until all of the butter has melted. Season with salt and pepper and then take the sauce off the heat and strain it.  For the pistachio crust: Small handful Chives 2 sprigs Rosemary leaves 5 sprigs Thyme leaves 1/2 cup parsley  2 garlic cloves 1/2 Lemon zest 1/4 cup Olive oil 1/4 cup Pistachios 1/4 cup Parmesan 1 tablespoon Salt 1 teaspoonPepper 1/2 cup Panko Method:  add all ingredients into a blender and blend until smooth everything is finely crumbled For the lamb: 1 rack of lamb chops  Salt and pepper Dijon mustard Olive oil Butter Method: Season your lamb chops with salt and pepper and score your lamb chops. In a hot frying pan, add olive oil and 1 tablespoon butter and sauté the lamb chops on every side to get a little browning on it. Remove and then brush Dijon mustard on every side and then roll the lamb into the seasoned pistachio crust mix. In a sheet pan add a bit of olive oil down and place the lamb chop on it. Drizzle a bit more olive oil over it and then bake at 425 degrees 18 mins.
