One of the best ways to gain an Asian water monitors trust (from my experience) has been through food. This one has gone from very defensive, impossible to pick up without it trying every defense it could use from biting, to scratching, to tail whipping, to pooping on me. But with patience, non-forced interactions, and using food as the main motivation to come to me I've gained a lot of it's trust. It's only up from here.
