Egyptian🇪🇬#Pickled #Lemons: A Unique Twist on Traditional Pickles الليمون المخلل  المصري بالعصفور وحبه   البركه Ingredients 	•	1 kg small yellow lemons 	•	1/2 cup safflower 	•	2 tablespoons nigella seeds 	•	5 tablespoons salt (a mix of fine and coarse salt is recommended) 	•	1 liter water 	•	1 tablespoon vinegar 	•	1 tablespoon sugar 	•	1/4 cup lemon juice 	•	1/4 cup olive oil or regular oil (optional for preservation) 	•	1 large carrot, grated 	•	2 red chili peppers (optional) 	•	1 tablespoon turmeric (optional) 	•	Green and red whole chilies for pickling with the lemons (optional) Instructions 1. Preparing the lemons: 	•	Wash the lemons thoroughly and bring a pot of water to a boil. 	•	Make a small cut on each lemon (do not cut all the way through). 	•	Boil the lemons in the water for 5-10 minutes to soften the peel (10 minutes for faster curing). 	•	Drain the lemons and let them cool completely. 2. Making the stuffing: 	•	Mix the safflower, nigella seeds, grated carrot, chili peppers, 3 tablespoons of salt, and oil. 	•	Stuff the cuts in the lemons with this mixture. 3. Preparing the brine: 	•	In a bowl, mix the water with the remaining salt, lemon juice, vinegar, sugar, turmeric, and 2 tablespoons of the stuffing mixture. 	•	Stir well until the salt dissolves completely. 4. In a bowl, add lemons, kosher salt, and 1/4 cup of cold water. Scrub each lemon with salt for 1 minute to thoroughly clean the skin.   2. Optional:Add cold water to the bowl and soak lemons in salt water for 5 minutes. 3. Rinse lemons and drain. Repeat if needed. 4. Thoroughly dry lemons with a clean towel. 5. Cut off the ends of the lemons and discard or save for other use. Thinly slice the lemons. 6. Remove all seeds. 7. Weigh the lemons, then measure an equal weight of sugar. The ratio for lemons to sugar is 1:1. I’m using 4 large lemons, about 20 oz., and 20 oz. of sugar in this video. 8. In a clean glass jar, layer sugar and the lemons. Finish with a layer of sugar on top. 9. Close the lid and KEEP IT IN THE FRIDGE for 7-10 days. 10. It may take a few hours for the lemons to begin releasing juice. Turn the jar daily to help the sugar dissolve faster. This also ensures that every lemon slice is covered in sugar syrup. You may also use a clean utensil to gently stir the sugar and press the lemon slices down to immerse each slice in the sugar syrup. This helps prevent mold. 11. After 7 to 10 days, the cheong is ready to enjoy. STORE IN THE FRIDGE for 3-6 months. Enjoy! The Ultimate Lemon Cookie Sandwiches 🍋😋 These easy cookies  are filled with a lemon cream cheese butter cream! They only take 10 minutes to bake and are so yummy. Full recipe below.  Cookie: * 16 tbsp unsalted butter, softened  * 1 1/4 cup sugar * 2 small size lemons, zested  * 1 egg, room temp * 3 tbsp lemon juice, separated  * 1 tsp vanilla extract  * 2 2/3 cup flour  * 1 tsp baking soda * 1 tsp baking powder  * 1/4 tsp salt Lemon Cream Cheese Buttercream: * 8 oz. Cream cheese, softened  * 8 tbsp unsalted butter, softened * 1/2 lemon zested  * Splash Lemon juice  * 3 1/2- 4 cups powder sugar * 2 tbsp heavy cream  Directions: * Preheat oven to 350° F. Line a large cookie sheet with parchment paper.  * In a medium bowl beat together butter, sugar and lemon zest till smooth.  * Squeeze both lemons that you zested and remove 1 1/2 tbsp of lemon juice and add to mixture. Add vanilla extract. Put aside remaining lemon juice.  * Slowly add in dry ingredients and beat slowly till combined. Chill dough for 10 minutes.  * Using a small or medium icecream scooper, scoop cookie dough and roll into balls. Place onto a cookie sheet leaving about 2 inches apart from each cookie. * Bake for 5 minutes and flatten cookie with back of a spoon or measuring cup. Bake for another 5 minutes till done. Remove from oven. Using a round cookie cutter you can make your cookies perfectly round if desired. Place on cooling rack.  * Make frosting by beating butter and cream cheese together till smooth. Add in lemon zest and remaining lemon juice you set aside. Add in powder sugar. Beat till smooth and add in heavy cream till combined.  * Place frosting in piping bag and pipe onto bottom of cooled cookie and place another cookie on top. Repeat till all cookies are filled. These cookies are perfectly tasty as is, too. If you don’t want a sandwich. Blueberry Crumb Cake 🫐🫐 This crumb cake is so moist and the lemon blueberry combo is the best! One of my favorite breakfast treats. Full recipe below.  Ingredients: Crumb:  * 3/4 cup brown sugar  * 1/2 cup cup all-purpose flour * 6 tbsp unsalted butter, melted Cake: * 2 cup all purpose flour  * 1 1/2 tsp baking powder  * 1/4 tsp salt  * 8 tbsp unsalted butter, softened * 1 cup granulated sugar  * 1 lemon, zested * 2 eggs, room temp * 1 1/2 tsp vanilla extract * 2/3 cup milk  * 2 cup blueberries  Lemon Icing:  * 1 cup powdered sugar  * 1/2 fresh lemon juiced  * 1 tbsp heavy cream  Directions:  * Preheat oven to 350°F. Grease 8x8 square baking dish or you can use a 9” round springform pan.  * Make crumb by combining all crumb ingredients together with a fork.
