Soak lentils in cold water and set aside. 2. Heat olive oil in a large pot over medium-high heat. Add diced vegetables, season with salt and pepper, and sauté for a few minutes. 3. Drain and rinse lentils, then add to the pot. Stir, season, and let simmer for 2–3 minutes. 4. Add enough water to cover everything. Simmer until lentils are tender, stirring occasionally.
