Beef Caldereta Ingredients * 2 carrots(peeled and cut into chunks) * 3 white potatoes(peeled and cut into chunks) * 1 onion(minced) * 6 cloves garlic(minced) * 2 bell peppers(cut into chunks) * 2.5 lbs beef chuck(cut into bite-sized pieces) * Salt and pepper to taste * Neutral oil * 2 tbsp tomato paste * 85 grams liver spread(1 can) * 14 oz crushed tomatoes * 2 bay leaves * 2 cups beef stock * 1 tbsp fish sauce * 1 tbsp soy sauce * 1 tbsp oyster sauce * 2 tbsp sugar * 3 thai chilies(halved) * 1/2 cup green olives(pitted) * 1/3 cup frozen peas Instructions 1. Prep all veggies and slice beef into bite-sized pieces making sure to season generously with salt and pepper. 2. Heat heavy pot with 3 tbsp of neutral oil on high heat and sear beef in batches so all sides or browned. 3. Remove beef, reduce the heat to medium, and sauté onions and garlic in the same pot making sure to scrape any bits left on the pan. 4. Add tomato paste and cook for a few minutes before adding liver spread and crushed tomatoes. Mix until fully incorporated. 5. Add back the beef along with bay leaves and cover with beef stock. Season with fish sauce, soy sauce, oyster sauce, sugar, and Thai chillies. 6. Bring to a simmer, and cook low and slow for 3-4 hours with the lid on until the beef is tender. 7. Deep fry carrots and potatoes at 350F for 4-5 minutes until browned. 8. Add fried carrots and potatoes, bell peppers, and green olives in the last 20 minutes of cooking or until the potatoes are fully cooked through. 9. Tallow.  Home made beef tallow. It’s easy. It’s good. I like that. It’s also super in right now. I saw some of this on the onlines for $30 a jar… and this was probably 5$ of fat and a little time.  I used brisket trim, and separated the meat and fat. From there I cubed the fat, put it in the freezer and let it sit for 30 mins. Then I ran it through a fine dye on the grinder, put it in a pot with a little bit of water and cooked it on low for 3 hours.  Filter that into a jar and you’ve got gold. This is the unlock to juicy smoked chicken.  It’s healthy. It’s juicy. It’s also done part offset, part direct heat so has an awesome flavor profile. I ate on this happily for several days.  The secret, which isn’t a secret, is to pull the chicken at 160 in the fattest part of the breast. (Example - this was a 5.95 lb prime rib. I cooked it for 30 min. On 500). After time is up, turn the oven off. Keep prime rib in the oven for 2-3 hours. **Do not open oven after this point**  This is for med rare meat. After it’s been sitting in the oven for a few hours, remove it, and let it sit on the counter for another 15 to 20 minutes before slicing. Place a piece of tinfoil over the meat.  Prime Rib- I removed the ribs from the roast. Cut off excess silver skin. Seasoning - Montreal steak seasoning Onion powder  Garlic powder  Paprika  Salt Butter- Irish butter 4-5 tbs 1 whole head of roasted garlic  Fresh parsley  roasted garlic- Cut the head off garlic, drizzle with olive oil, wrapped in tinfoil, and cook on 375 for about 45 minutes.
