Let’s make some breakfast! Corn Meal is a healthier alternative and this salt fish takes it to the next level. So savory and flavorful :) Happy Eating  Ingredients  Mayi Moulin - Corn Meal  Herring / Salt Fish  Chopped onions and peppers Chopped tomatoes Chopped spinach  Neguess Creole Rice Epis  Fresh crushed scallions and garlic Thyme and Parsley Optional Maggi Bouillon cubes  Optional Garlic powder, paprika or Sazon Goya  Prepare the salt fish by soaking in water. Remove the bones then clean with fresh citrus and soak in water for a few more minutes. Then rinse with cold water, pat dry and then cut / shred into small pieces. Add cooking oil to a pot on medium heat and begin to sautee scallions and garlic until brown. Now add chopped onions, herring, peppers, tomatoes and chopped spinach. Allow this to cook well and blend together. Next add in any seasonings such as garlic, maggi, Sazon, etc.  For every 1 cup of corn meal add 4 cups of water. Mix in the water very well and taste. Adjust seasonings until desired preference. Then wash corn meal until the water runs clear and drain. Set the temperature to high to bring water to rapid boil. Add in corn meal and stir well. Lower the temperature to medium and allow to cook covered for 1 hour. Every 15 minutes mix and scrape the bottom of the corn meal. If the water has dissolved before one hour, add a few more cups.  After all the water is completely absorbed, lower the temperature and begin mixing vigorously, pushing the cornmeal and scraping the bottom for about 10 minutes until it becomes soft and blends together.
