Ingredients: • 20 oz fresh refrigerated tortellini • 1 lb ground beef • ½ medium onion, diced • 4 garlic cloves, minced • 1 tbsp tomato paste • 2 tsp avocado oil • 1 tsp salt (for meat) • ¼ tsp black pepper (for meat) For the Sauce: • 1 (28 oz) can crushed tomatoes • 1 cup water • 1 tbsp garlic powder • 1 tbsp onion powder • 1 tsp dried oregano • 1 tsp dried basil • 1 tsp salt, (or to taste) • ¼ tsp black pepper • ¼ tsp red pepper flakes (or to taste) • ¼ tsp baking soda (to neutralize the acidity of the tomatoes), add a little more if needed For the Ricotta Topping: • 1 cup ricotta cheese • ½ cup shredded mozzarella cheese • ½ cup grated Parmesan cheese • 1 tbsp freshly chopped parsley • ½ tsp garlic salt (or to taste) • ¼ tsp black pepper For the Final Dish: • 1 cup shredded mozzarella cheese • 1/4 grated Parmesan cheese Extra: • Fresh parsley, chopped Instructions: 1. Heat 2 tsp avocado oil in a large oven-safe deep skillet over medium heat. Add diced onion and sauté for 3 minutes. Stir in minced garlic and cook for 1 minute. 2. Add ground beef, season with 1 tsp salt and ¼ tsp black pepper, and cook 5 minutes. Stir in tomato paste and cook for 2 minutes. 3. Add crushed tomatoes, garlic powder, onion powder, oregano, basil, salt, black pepper, and red pepper flakes. Sprinkle in ¼ tsp baking soda to neutralize the acidity of the tomatoes. Simmer for 6-8 minutes. 4. Pour in 1 cup water, bring to a simmer, then add tortellini. Stir, cover, and cook for 4-5 minutes, or until tender. 5. Sprinkle on 1 cup shredded mozzarella and ¼ cup Parmesan. Drop dollops of ricotta mixture (ricotta, mozzarella, Parmesan, parsley, garlic salt, and black pepper) on top. 6.
