Creamy Chicken Fajita Pasta . Ingredients • 300 g (10.5 oz) pasta • 3 tbsp olive oil • 400 g (1 lb) chicken breast, diced • 30 g (1 ounce) fajita seasoning • 1 medium onion • 1 red pepper • 1 green pepper • 150 ml (3/4 cup) double cream • 100 g (3.5 oz) cheddar, grated • Freshly ground black pepper Instructions • Boil the pasta in salted water according to the instructions on the pack. Reserve 1 cup of pasta water before draining. • In a large pan, heat the olive oil and shallow fry the chicken over medium heat until slightly golden (4-5 minutes). • Add the fajita seasoning to the pan and stir well to cover the chicken in it. Continue to cook for another minute, then add the onions and peppers. • Fry everything for 4-5 minutes until the veggies soften, then pour the double cream and allow it to bubble for a minute. • Transfer the pasta to the pan and stir. Add a bit of pasta water if the sauce looks too thick. Next, add the grated cheddar and stir well until it melts. Season to taste with freshly ground black pepper. .
