Part Two: Fettucine Pasta with Sausage and Zucchini with @Cookingwithmariarosa  Ingredients:  1 shallot  3 zucchini  2 garlic  2 pounds sausage  Olive oil  Salt and pepper to taste  Cheese and parsley optional  Directions: 	1.	Heat olive oil in a pan over medium heat. 	2.	Add the shallot and sauté until softened. 	3.	Add the sausage and cook until browned, breaking it up into smaller pieces as it cooks. 	4.	Stir in the garlic and cook until fragrant, about 1 minute. 	5.	Add the zucchini and cook until tender. 	6.	Toss in the cooked pasta, mixing everything thoroughly. Homemade Fettuccine with Crumbed Sausage and zucchini with @Cookingwithmariarosa  Part 1: the homemade pasta. Recipe below!  2-3 cups semolina flour  4 eggs  On a clean surface flour. Make a hole in the middle and add your eggs. With the fork beat the eggs and Gently incorporate the flour with the eggs. Then begin to kneed the dough until smooth and it doesn’t stick to your hands. Keep adding the flour until you achieve that consistency.  If you have a pasta machine stretch the dough using the instructions with that machine.  We have a kitchen aid so we stretched it 5 times on level 1. Flouring the dough between each.  Then stretched thinned out the dough using levels 2-6.
