#foodies #foodietiktok INGREDIENTS PASTA: (I doubled this) 2 cups flour 3 eggs 1 tsp salt 1 tbsp olive oil Butter + olive oil once cooked INGREDIENTS FILLING: 16 oz ricota 2 eggs 1 cup parmesan grated 1 cup mozarella 1/2 cup shredded spinach 1 tbsp Italian seasoning 1 large pinch nutmeg Salt & pepper to taste INSTRUCTIONS: 1) pasta - add flour to clean surface, create a nest in the middle & add eggs, salt & olive oil. Slowly mix together and incorporate flour. Once paste is thicker, fully incorporate flour and kneed dough for 10 minutes (until dough is smooth and bounces back when pressed). Keep covered in plastic wrap for 30 minutes. 2) while dough is resting, mix all filling ingredients in a bowl. Add to piping bag (or zip loc bag with tip cut off). Once done resting, on a floured surface roll dough flat (I use a kitchenaid but you can also just use a rolling pin). Pipe on filling, then surround each filling dot with water. Lay second layer of flattened dough on top, pressing down all around each filling dot to seal two pieces of dough. Use a ravioli cutter to cut out ravioli. 3) cook pasta in oiled + salted boiling water for 5ish minutes. Strain and oil/butter raviolis. Serve with grated palm & fresh parsley
