Bottom-Friendly Fettuccine Alfredo 🤤 Fun fact: Butter and parmesan cheese have virtually NO lactose in them. That's why you'll catch me using butter often on my page. Ingredients: 1 medium-sized head of cauliflower 1 1/4 C raw cashews 2 cloves garlic, peeled 16 oz mushrooms (whatever kind you like) 1/4 C dry Italian seasoning 1 tbsp sherry cooking wine or dry white wine 3 tbsp butter (or vegan butter) 2-3 tbsp olive oil 1/2 C nutritional yeast 1/4 C reserved pasta water 1 C plant-based milk (unsweetened) Salt and pepper to taste 1 pound fettuccine noodles Instructions: Chop cauliflower into florets and add to a stockpot with cashews and garlic. Cover with water and place over high heat. Boil the mixture for 20-30 minutes, or until the cashews and cauliflower are very soft. Reserve ¼ cup of cooking water. Strain and add it to a blender with the nutritional yeast, 1 teaspoon of salt, ¼ cup of the reserved cooking water, and plant-based milk. Blend the mixture until very smooth. Place the dry Italian seasoning in a small heat-proof bowl and cover in hot water. Set aside. To a sauté pan over medium-high heat, add olive oil and butter. Once hot, add the mushrooms and cook until all the water has evaporated and the mushrooms begin to brown about ~15 minutes. Add the cooking wine and cook for 2 minutes. Drain the excess water from the Italian seasoning and add it to the mushrooms. Cook for an additional 2 minutes. Add the cauliflower Alfredo sauce to the sauté pan with the mushrooms and mix. Set aside. Cook pasta according to the package instructions for al dente. Reserve ~2 cups of the pasta water before draining the pasta. Toss the pasta and sauce together. Add pasta water if the pasta needs additional moisture, adding 1/4 C at a time until the sauce is creamy and smooth. Top with parmesan cheese. WHAT YOU NEED: 3 tbsp evoo 4 large garlic cloves 1 tbsp or red pepper flakes to taste depending on your heat tolerance about 2 cups frozen broccoli (fresh is an option but will require longer cooking time to get it softer and mashable) 1/2 lb (about 1/2 standard box) farfalle pasta 1-2 tbsp grass fed butter 1/2 cup freshly grated pecorino romano cheese more cheese + black pepper for topping  WHAT TO DO: 1. bring a large pot of salted water to a boil and cook the broccoli until tender enough to smash with a fork. 2. sautee the garlic and red pepper flakes in the evoo on low heat in a large skillet. 3. pull the broccoli out of the boiling water and add the farfalle directly into the same water and cook until done. 4. mash the broccoli with a food masher, or the bottom of a cup. it should turn into a sauce like texture but still have some rough chunks throughout. half sauce, half broccoli! 5. Big Ass Pasta Ziti Today we’re freestyling - throwing together a vodka sauce baked ziti with this giant pasta shells I found and some stuff I had around the house. We’re also having my first beer since getting sick a few weeks ago, and overall getting up to some shenanigans.  This is more of a template for your own messing around than a recipe, but I hope you enjoy it nonetheless. It comes together relatively quickly, and will lend itself to your interpretation and pantry easily. Its also perfect for prepping dinner early, batching for the holidays, bringing a dish places, or dropping off to someone you love when they need it. HOMEMADE RAVIOLI // heart shaped and pink for galantines because let’s be real… galantines > valentines 🩷 #pasta #pastatiktok #homemade #EasyRecipe #momof4 #momoffour #boymom #whatsfordinner #DinnerIdeas #dinner #recipes #fypシ゚viral #foodies #foodietiktok  INGREDIENTS PASTA: (I doubled this) 2 cups flour 3 eggs 1 tsp salt 1 tbsp olive oil Butter + olive oil once cooked INGREDIENTS FILLING: 16 oz ricota 2 eggs 1 cup parmesan grated 1 cup mozarella 1/2 cup shredded spinach 1 tbsp Italian seasoning 1 large pinch nutmeg Salt & pepper to taste INSTRUCTIONS: 1) pasta - add flour to clean surface, create a nest in the middle & add eggs, salt & olive oil. Slowly mix together and incorporate flour. Once paste is thicker, fully incorporate flour and kneed dough for 10 minutes (until dough is smooth and bounces back when pressed). Keep covered in plastic wrap for 30 minutes. 2) while dough is resting, mix all filling ingredients in a bowl. Add to piping bag (or zip loc bag with tip cut off). Once done resting, on a floured surface roll dough flat (I use a kitchenaid but you can also just use a rolling pin). Pipe on filling, then surround each filling dot with water. Lay second layer of flattened dough on top, pressing down all around each filling dot to seal two pieces of dough. Use a ravioli cutter to cut out ravioli.   3) cook pasta in oiled + salted boiling water for 5ish minutes. Strain and oil/butter raviolis. Serve with grated palm & fresh parsley
