These are gooey, fudgey, and so delicious! 1 1/2 cups sugar  1/2 cup powdered sugar  3/4 cup flour  2/3 cup cocoa 2 tsp instant espresso powder  3/4 tsp salt  1/2 cup vegetable oil  1 large egg  2 tbs water  1 tsp vanilla  1/4 tsp peppermint extract  1 cup chocolate chips  1/2 cup crushed peppermints -preheat oven to 350, grease a 8x8 inch dish with spray, line with parchment and spray the parchment.  -add all the dry ingredients to a bowl and whisk until combined, then add the wet ingredients and stir with a spatula until well combined.  -fold in the chocolate chips and peppermint, spread into the prepared dish, and bake for 40-45 minutes or until set.
