RICE & GUNGO PEAS 🇯🇲 Here’s what you need*: - 2 cups jasmine rice (or long-grain rice of choice) - 2 cups or 1 can cooked gungo peas (pigeon peas) - 1 tbsp coconut oil - 2 garlic cloves, minced - 1/2 tsp pimento seeds, crushed - 2 cups coconut milk - 1 cup water - 1 tsp salt (or to taste) - 2 tsp all-purpose seasoning - 2 thyme sprigs - 2 scallion - 1 scotch bonnet pepper - 2 tbsp butter Note: For jasmine, basmati, or parboiled rice, I use a ratio of 1.5 cups of liquid for 1 cup of rice.
