You’ll Need: - 1 onion, chopped - minced garlic - 2-3 skinless chicken breasts, chopped up - 1 cup long grain rice - 2.5 cups chicken broth or stock - 2 cups frozen broccoli - 1/3 cup Parmesan cheese - 1/4 cup nutritional yeast - 1/2 cup cottage cheese, blended - spinach, chopped up - Spices: garlic powder, smoked paprika, salt & pepper You’ll Need To Do: - In a pan over medium heat, add some olive oil. Once warm, add your onions and cook for about 3-5 minutes. - Add minced garlic and chicken. Season and measure with your heart with above spices. Cook in the pan for about 5 minutes (Don’t worry, it will finish cooking later on!) - Add your broccoli, rice, and chicken broth. Make sure all rice is submerged. - Turn the heat up to high and get it boiling. Once boiling, cover and reduce heat to medium low. Cook for about 15-20 minutes. - Once cook time is over, uncover and add in Parmesan cheese, nutritional yeast, cottage cheese and spinach. Mix all together. - Enjoy!
