My local Costco sells Pork Sparerib Portions, which are ribs that are made by cutting a regular slab of spare ribs lengthwise into strips 1 1/2 - 2 inch strips. I usually get these for making pork broth, but these are the perfect bite-sized ribs to smoke for parties, especially during the big game because they’re the perfect finger foods and still so yummy and delicious. You should plan to make a lot because it goes quickly! For this smoke session, I smoked the ribs at 275 degrees in my @traegergrills for 2.5 hours unwrapped, 2 hours wrapped, and 30 minutes sauced and unwrapped at the end.
