The #1 most loved recipe of 2024 with 25 million views is my CRISPY RICE SALMON SALAD WITH CREAMY HONEY GINGER DRESSING and it is absolutely delicious; so if you haven’t made it yet, consider this your sign!⁣ ⁣ If you like recipes like this, be sure to FOLLOW my page for more in 2025🎉! ⁣ ⁣ Makes 4 large servings or 6 smaller⁣ Crispy Rice⁣ 2 cups cooked rice, cooled (I used jasmine rice)⁣ 2 tsp soy sauce⁣ 2 tb chili crisp/crunch (Trader Joe’s makes a good one, I used Momofuku this time!)⁣ 1 tb sesame oil⁣ ⁣ Salmon⁣ 8oz salmon⁣ Pinch garlic powder, salt & pepper⁣ ⁣ Salad⁣ 5 Persian cucumbers, thinly sliced (or 1 large English cucumber)⁣ 1 cup edamame, shelled⁣ 1 bunch green onions, thinly sliced (3/4 cup)⁣ 1 avocado, diced⁣ ⁣ Dressing⁣ 1/4 cup olive oil⁣ 1/4 cup toasted sesame oil⁣ 3 tb soy sauce (or sub coconut aminos)⁣ 3 tb rice vinegar⁣ 2 tb honey⁣ 1 1/2 tsp ground ginger⁣ 1/2 tsp kosher salt⁣ ⁣ First, prepare the crispy rice topping. Preheat oven to 400F. Line a baking sheet with parchment paper. Add cooked and cooled rice to the baking sheet. Toss well with the soy sauce, chili crisp and sesame oil. Bake for 30-35 minutes, tossing half way through (just watch to make sure it doesn’t burn). While the rice is in the oven, season salmon and place it on a baking sheet. Add to the oven (with the crispy rice) and let bake for 13-14 minutes, or until desired doneness. Remove the rice the oven and set aside. Remove the salmon try from the oven, shred into smaller pieces and set aside. Next, chop/slice all of the ingredients for the salad and add to a large bowl. Add the shredded salmon and crispy rice on top. Last, make the dressing. Whisk to together all of the ingredients for the dressing. Taste and adjust seasonings as needed. This delicious orzo salad is topped with feta cheese and full of fresh delicious vegetables. This salad is perfect for meal prepping and taking for lunch 🥗  ✨ INGREDIENTS ✨ For the salad: * 16 oz. Orzo pasta * 1 Cup english cucumber * 3/4 Cup red onion * 1 red bell pepper * 2 cups baby spinach leaves * 1 Cup kalamata olives * 1/2 Cup black olives * 1 Cup feta cheese crumbles For the Dressing: * 1 whole lemon * 1/2 Cup avocado oil * 1/4 Cup olive oil * 1 garlic clove * 1 1/2 tsp. Dried oregano * 1 tsp. black pepper * 1 tsp. salt ✨INSTRUCTIONS ✨  1. Set a large pot of water on the stove on high heat. 2. Prepare your vegetables as described in ingredients list. (watch video for a complete walkthrough of the ingredients prep.) Set them aside. 3. Add the orzo to boiling water and cook to al dente. (tender but firm-about 10 minutes) 4. In a separate medium bowl combine salad dressing ingredients. 5. Whisk together all the salad dressing ingredients. 6. Set aside. 7. Chop the kalamata and black olives. set aside. 8. When the orzo is cooked drain the orzo in a strainer. 9. Rinse the orzo under cold water to cool it quickly. 10. Drain orzo thoroughly and cool to room temperature. 11. In a large salad bowl pour in the room temperature or colder orzo. 12. Add the vegetables on top of the pasta. 13. Toss the salad ingredients.  14. Pour on the salad dressing. 15. Add Feta Cheese on top 16. Lightly toss to coat the salad in the dressing.  17. Serve. 18. I might be a little late to the viral crispy rice trend, but better late than never! This salad has tons of fresh herbs, punchy lime, and lots of crunchy bright veggies that are delicious and healthy. The crispy rice is also totally optional, but it’s a fun addition and super easy to make. The dressing is inspired by a recipe from RecipeTin Eats that was influenced by Nuoc Cham, a popular Vietnamese dipping sauce. I switched it up a bit and it’s definitely not traditional, but it’s insanely delicious!!! I added some shredded rotisserie chicken for some added protein and it was the perfect lunch.  Serves: 4 as a meal Total Time: 30 minutes  Crunchy Slaw Salad: 1/2 head Napa cabbage, chopped 3 carrots, shredded 4 Persian cucumbers, diced 1 shallot, thinly sliced 1/3 cup cilantro, roughly chopped 1/4 cup mint, roughly chopped  3 green onions, chopped 1/3 cup roasted peanuts, chopped  4 cups shredded chicken Crispy Rice: 1 1/2 cups day old white rice 1 tablespoon toasted sesame oil 1 tablespoon soy sauce 1 tablespoon chili crisp  Vietnamese-Inspired Dressing: 1/3 cup extra virgin olive oil 2 tablespoons toasted sesame oil 2 tablespoons fish sauce (can use soy sauce) 3 tablespoons rice wine vinegar 1 tablespoon maple syrup 1 large clove of garlic, grated Juice from 1 lime 2 teaspoons chili crisp or sriracha Instructions: First make the crispy rice. Toss the rice, sesame oil, soy sauce and chili crisp until combined. Bake at 400, tossing every 10 minutes until crispy (about 40 minutes) OR air fry at 400 tossing every 5 minutes until crispy (about 15 minutes). I personally prefer the rice to still be a little soft in the center! Make the dressing by whisking together all ingredients until combined. Gives the best winter / autumn vibes 🤎 2 cups baby arugula 5-8 sprigs of parsley Shaved parm cheese 1 honeycrisp apple Chopped walnuts ~1/4 cup Extra virgin olive oil Lemon juice 2-3 cloves of garlic 1 tbsp apple cider vinegar 1 tbsp honey Pair with a protein of your choice! Dice your apple, parsley, mince your garlic, shave parm cheese, and halve your lemon. Add your arugula to a bowl and combine with apple, parsley, cheese, and nuts.
