Vegetable Pickles Recipe Ingredients: 	•	Cauliflower 	•	Carrot 	•	Turnip 	•	Pumpkin 	•	Baby eggplant 	•	Garlic 	•	Green chilies 	•	Cilantro 	•	White vinegar 	•	Salt 	•	Mustard seeds Instructions: 	1.	Prepare the mustard seed mixture: 	•	Crush ½ cup of mustard seeds. 	•	Blend cilantro and green chilies with a small amount of white vinegar until smooth to create a sauce. 	2.	Prepare the vegetables: 	•	Chop all the vegetables into cube-sized pieces, then wash them thoroughly. 	•	Boil each type of vegetable separately. Check their doneness every minute by biting them lightly with your nail—if your nail goes through smoothly, the vegetable is cooked. Remove it from the boiling water and set aside. 	•	Repeat the process with all the vegetables. 	3.	Cooling: 	•	Let the boiled vegetables cool on the counter for about 20 minutes. 	•	Keep the water used for boiling the vegetables in a separate container and allow it to cool as well. 	4.	Layering: 	•	In a large plastic container, start layering the vegetables. After each layer, sprinkle salt, the chili-cilantro sauce, and crushed mustard seeds.
