Cheesy beef, broccoli, and rice is an easy one pan dinner that can be made in about 30 minutes! INGREDIENTS 1 lb ground beef 1 chopped onion 1/2 tsp each of salt and pepper 1 tsp onion powder, garlic powder, and paprika 1 tbsp minced garlic 2 cups of beef broth 1 cup white long grain rice, rinsed 2 cups chopped broccoli 1 1/2 cups shredded Colby Jack cheese INSTRUCTIONS To start making this recipe, chop one onion. Roughly chop broccoli into smaller pieces (just be careful not to chop too small or it will completely fall apart while cooking). Heat a large skillet over medium-high heat. Add the chopped onion and 1 lb of ground beef and spread it out evenly in pan. Season with salt, pepper, onion powder, garlic powder, and paprika. Once the ground beef is browned remove any extra grease if needed. Next, add the minced garlic. Add the rice, broccoli, and beef broth. Bring to a boil, reduce heat to medium-low, and cover with a lid. Let cook covered for about 15 minutes or until rice is cooked. Add about a cup of shredded Colby Jack cheese and stir. Top with more cheese and cover with the lid to let the cheese melt or pop it in the oven under the broiler for just a few minutes. Enjoy! #dinner #Recipe #DinnerIdeas #onepanmeals #skilletdinner #skilletmeals #rice #groundbeef
Chicken Cheese and Rice is a family favorite and only takes about 30 minutes to make! INGREDIENTS 1 lb chicken 2 TBSP butter 1/2 tsp each of salt and pepper 1/4 tsp cayenne 1 tsp each of cumin, dried cilantro, and chili powder 1 TBSP of minced garlic 10 oz can of Rotel 8 oz can of tomato sauce 1 1/2 cups of chicken broth 1 cup of long grain white rice (uncooked & rinsed) 1 tbsp olive oil White Queso Cheese Dip (I like Pancho’s brand from Sam’s Club) Flour tortillas Pico de gallo Fresh cilantro INSTRUCTIONS Cut chicken into small pieces and cook in a skillet on medium-high heat with butter. Season with salt, pepper, cayenne, cumin, dried cilantro, black pepper, and chili powder (you could use a taco seasoning packet instead of this seasoning blend if you prefer). Let that cook until chicken is cooked through. Move the chicken to the edges of the skillet and pour about 1 tbsp of olive oil into the skillet. Add uncooked, rinsed rice and stir around for a couple of minutes. Add Rotel, tomato sauce, minced garlic, and chicken broth. Stir well, cover with a lid, and cook on medium-low heat for about 15-20 minutes or until rice is cooked (I stirred it once about half way through). Microwave queso and pour some over the chicken and rice. Top with fresh cilantro. Serve as is or in tortillas with fresh pico de gallo.
