How to Make the Perfect Smashburger: Swipe for Tips and read below! I get a lot of questions around how I get the perfect Crust/Sear on my Smashburgers, as well as how I make them in general! Here are 4 very important steps to making the Perfect Smashburger! 1. Choosing the right condiment or sauce! Depending on the recipe or theme of your burger, you need to choose whether you should keep it simple with things like Mayo, Mustard, and the sort… or if you should make a fancy and fitting burger sauce to highlight the flavors you want! This burger was a Korean BBQ burger, so I made a Gochujang mayo to use. 2. Choose the right beef! Now I’ve tried 65/35 up to 90/10, and the best hands down is 75/25! It has enough fat to render and help form that beautiful crust, while also staying juicy even when smashed. Remember Fat = Flavor!! You can experiment here, but 75/25 or 80/20 are really the only solid and consistent options to use! Med hi heat works best! 3. Pick the right ingredients and toppings! For example, if I’m testing out a new technique or seasoning, I love a simple burger with just Mustard, raw white onion, pickles, and the burger with cheese all on Potato bun. This helps the meat stand out and gives me a good baseline for trying new things! For this burger, to stick with my theme of Korean BBQ, I decided to use a Brioche bun along with Korean bbq sauce on the patty before adding havarti cheese, kimchi pickles, lettuce, and a pan fried egg with a runny yolk. It was the perfect balance of flavors for what I was looking for here! 4. Put it all together and Enjoy!! Now I’m a believe of the order of toppings matter! Always toast your bun, and put sauce on the top and bottom bun as well! Then I like to put some of the ingredients under the patty, and some on top! Generally the pickles and onion on bottom for me, as well as lettuce! There really is no right or wrong way, it’s just preference, and if it tastes good, you did the only thing that matters right!
