Epic Smoked Prime Rib 🤤 Made by @grillnation on his PEAK 2.0 🔥 . The GMG is built with high quality materials that makes it durable and ranges in temperature from 150-550° accurately 🤯 . I used the Tech Savvy aws server mode app for the whole cook and it came out perfect! . Smoked at 250 for 2 hours and then cranked up to 325 to finish off. 3 Racks in 4 Hours Today we’re smoking 3 racks of ribs in 4 hours. It’s 1:30 in the afternoon and we made a last minute decision to have ribs for dinner.  I started at 2pm and they were done at 6pm.  I like using a foil boat for my briskets because it helps speed up the cook, keeps the juices close to the meat, and keeps the meat exposed to the heat.  So I figured I’d try the same with ribs - and they turned out great.   Let’s get into the cook. Trim any loose meat and excess fat.  Leave the membrane on to lock in the juices. Rub with salt, paprika, sugar and black pepper. Rest for 30m at room temp or longer in the fridge Smoke: 180F for 1 hour - meat side up 275F for 2-3 hours - spritz every 20-30 minutes. (50/50 water/acv and 1T worcestershire sauce) Foil boat with basted on melted butter for 30 minutes 325F with sauce for 30 minutes (Make sure you watch closely after adding butter and sauce so they don’t burn) They are done when they have a 90 degree bend and are 195-200F degrees. Rest: A few mins at room temp or a few hours fully wrapped in foil. Slice the ribs upside down so you can see the bones. I’ve tried this method twice now and both times they turned out smokey, tender, tasty, and juicy. Collard greens recipe 2 bunches of collard greens 2 smoked turkey legs (you can use 1 fr I'm just greedy) 1/2 stick unsalted butter 1/2 sweet onion 5 cloves garlic 11/2 tbsp chicken powder (or any chicken base) 1 tbsp creole seasoning 1 tbsp black pepper 2 tsp garlic powder 2 tsp onion powder 8 cups water 1 cup Apple cider (the drinkable one, NOT VINEGAR. Before rubbing your brisket you can optionally apply a binder.  If your meat is already tacky then you can skip this step.  A binder will help the rub stick to your meat and especially the hard fat.  If you’ve ever applied rub to the deckle fat, you know it just bounces right off.  I like to use yellow mustard, but it can be a bit thick, so I thin it out with a little bit of worcestershire sauce or worcestershire sauce for those not from any England.  You don’t have to add a lot, just enough to make your meat tacky enough for the rub to stick. You can also use water, mayo, sriracha, tallow or any other liquid that you want to try.
