Same day sourdough garlic rolls • Sourdough recipe: 125g active starter 325 g warm filtered water 12g olive oil 12g honey 12g salt 500g bread flour Instructions 1. Combine starter and water on a scale and mix. 2. Add olive oil, honey, salt, and flour. Mix till all combined (I prefer using my hands) 3. Cover dough with a damp towel or plastic bowl cover and let rest for 30 minutes. 4. After the dough has rested for 30 minutes you will be doing your 1st of 4 set of stretch and folds. After each set of stretch and folds wait 30 minute in between. 5. After your fourth set and stretch and folds, cover dough back up and let it rise for 3-4 hours or until it has about doubled in size. 6. Once the dough has risen we are going to be shaping them into balls that are about 80g each. It should make 12 rolls. 7. To make them into ball you can either shape them the same way you would a sourdough loaf or you can flatten the ball out and pinch all the sides into the middle almost looking like a flower. Then flip the ball over seam side down and just tighten them like a normal sourdough loaf. 8. Now we are going to be buttering or oiling a baking dish that is 11 x 7 and placing the shaped dough balls into this dish. 9. Cover dish with a damp towel and let rest for 2 hours. 10. Preheat oven to 375 degrees and cook for 25-30 minutes until slightly golden brown. 11. While the rolls are baking melt 3 tbsp of butter in a dish. Add as much fresh garlic as you would like and either parsley or chives to it. 12. Right as you pull the rolls out of the oven add the butter topping to them and enjoy! •
