Jamaican Oxtails, Steamed Cabbage 🥬 🥬 and Rice & Peas 🍛 🍛 Oxtails 1. Wash oxtails thoroughly in lemon and vinegar, then pat dry . 2. Season oxtails with browning, oxtail seasoning , roast garlic powder, thyme, black pepper, brown sugar, bayleaf, cayenne pepper and onion powder. 3. Add finely diced onions, carrots, garlic, tomatoes and bell pepper to oxtails and let it marinate for about 2 hours. 4. Sear oxtails until it is browned then add the diced veggies used for marinade to pot. 5. Add salt, soy sauce, scotch bonnet, ketchup and enough water to boil oxtail. 6. Let it cook for 3 hours. Steamed Cabbage 🥬 🥬🥬 1. Add diced cabbage, carrots, onions and rosemary to pot. 2. Season with a pinch of salt and all purpose seasoning. 3. Then a little water and allow to steam for about 20 minutes. Rice and Peas 🍛🍛🍛 1. Add a can (439g) of kidney beans to pot 2. Then 1/3 cup of coconut cream and 1/2 cup of water. 3. Boil for about 5 minutes. 4. Then add red onions, garlic, thyme, spring onions, salt, black pepper and 1 cup of thoroughly washed rice. 5. Cook for 5 minutes over medium to high heat then 10 minutes over low heat.
