Chicken Alfredo Stuffed Potatoes by @thedailykale โจ Simple yet delicious, this is the perfect easy weeknight dinner to whip up in no time! 1 potato 1/2 cup chopped / cooked chicken 1/2 cup shredded mozzarella Garlic powder, paprika, oregano, black pepper, and salt (to taste) 2-3 tbsp Alfredo sauce 1. Bake potato with oil and a little sprinkle of salt for 1 hour, at 400F. 2. Once potatoes have cooled a little bit, enough to handle them without burning yourself, cut them in half. 3. Scoop potato filling out of potato, *carefully* and place in a bowl with chicken, spices, cheese and Alfredo sauce. Mix together. Place the mixture evenly into the potatoes. 4. Place back in oven at 425F, top with extra mozzarella, and abke for 12-15 minutes or until cheese has melted. Can broil for the last couple of minutes if preferred. I topped it with fresh parsley and chili onion crunch from Trader Joe's. *This serves 1 or 2 potato halves
