Save this for your Super Bowl Sunday! Or as I like to call it Snack Bowl Sunday ๐Ÿ˜Š๐Ÿฅ‘๐Ÿˆ Ingredients: -2 large chicken breasts -Southwest marinade (I used Wegman's brand) -1/2 red onion diced -1 roma tomato diced -1 can of black beans rinsed & drained -tortilla chips -handful of cilantro finely chopped -2 green onions thinly sliced -shredded cheese  -2 mini or 1 large avocado -lemon or lime juice -garlic powder -salt -pepper Steps: 1. Slow cook chicken breasts in marinade on high for 3 hours. Once done, shred chicken with a fork and stir around in the crockpot so juices are absorbed. 2. Layer chips on a line baking sheet and top with shredded cheese, 1/2 of the shredded chicken, black beans, onions & tomatoes. Lay another layer of tortilla chips and repeat the toppings again finishing with another layer of shredded cheese 3. Bake on 400 for 8-10 minutes or until cheese has melted 4. Mash avocado in a bowl with lemon juice, 1/4 tsp garlic powder, salt & pepper 5. Game day just got a healthy upgrade! ๐Ÿˆ๐Ÿ”ฅ These buffalo turkey meatballs are packed with flavor, protein, and a little kickโ€”perfect for snacking without the guilt! ๐Ÿ™‚ Whoโ€™s making these for the Super Bowl?  Some tips: *I like to use a scoop when forming my meatballs, it really makes the process quicker & easier! *Stoves will vary but sometimes the meatballs on the outside of the pan need a little more time cooking and I will move them towards the middle at the end for a minute or two if needed *My favorite pan for cooking meatballs in the @Caraway Home saute pan! They cook without burning and cleanup is a breeze! You can use my code "COOPSKITCHEN10" or the link in my bio for 10% off any Caraway order.  Ingredients: for meatballs: -1.5 lb ground turkey  -1/2 c bread crumbs (I @4C Foods gluten free breads crumbs) -1 egg -1 finely chopped green onion -4 cloves of minced garlic -1/3 c buffalo sauce -1 tbsp olive oil -salt & pepper  other ingredients: -ranch and/or blue cheese for dipping (for blue cheese I used @Daiya Foods dairy free blue cheese)  -more thinly sliced green onion for garnish -more buffalo sauce to drizzle on meatballs -toothpicks for serving Steps: 1. Add all ingredients for the meatballs in a bowl and mix until everything is evenly combined  2. Form meatballs that are about 1.5" thick 3. In a pan preheated to medium heat, add olive oil and then carefully add the meatballs. Let cook for 5-6 minutes on one side, then flip and cook for another 5-6 minutes. 4. Once cooked, place meatballs on serving platter and drizzle with buffalo sauce and top with sliced green onions.
