MINI BROWN SUGAR CINNAMON SOURDOUGH TOASTER STRUDELS Me singing this to my sourdough starter šŸ„¹šŸ«¶ Recipe below OR go to my website through the link in my bio šŸ¤Ž  #Recipe Details (6 minis): Sourdough Puff Pastry: - 205g all-purpose flour - 7g salt - 226g butter, cold & grated - 60g water - 113g sourdough discard Filling: - 1/4 cup + 2 tbsp brown sugar - 1/2 tbsp all-purpose flour @Bobā€™s Red Mill  - 1/2 tbsp cinnamon - 1 tbsp butter, melted - 1 tsp vanilla extract - 1 egg + 1 tbsp milk, for egg wash *Glaze recipe on my website + more specific details*  Instructions: Prepare the SD puff pastry. Whisk together the sourdough discard and water. In a large bowl, whisk together the flour and salt. Add butter, and mix. Add the discard mixture and stir. Then knead with your hands until well combined and there are no dry bits of flour. Wrap in plastic wrap & roughly shape into a rectangle. Place in the fridge for 30mins to chill. Place the dough onto a floured surface & roll out into a large rectangle (~18ā€x8ā€). Perform a book fold. Specific instructions on how to do these are on my website! Wrap in plastic wrap & chill in the fridge for 30 mins.  Then remove, and roll it into a long large rectangle (~24x8ā€). Perform 2-3 series of letter folds (details on my website).  After the last fold, roll the dough into a large rectangle (12ā€x8ā€), fold into thirds, and tuck a piece of parchment paper in between the folds. Refrigerate the dough for at least 1 hr before using. Make the toaster strudels. Preheat the oven to 400F & line a baking sheet with parchment paper. Set aside.  Make the filling by mixing together all of the ingredients in a medium bowl. Divide the puff pastry in half. Save whichever half you arenā€™t using to use another time, if desired. Slightly roll out the puff pastry on a sheet of parchment paper. Cut into 12 small rectangles. Spoon ~1/2 tbsp of the filling in the middle of half (6) of the rectangles, leaving ~1/2ā€ border. Brush the edges with the egg wash. Place the other 6 rectangles over the ones with the filling. Use a fork to seal. Transfer the strudels to the baking sheet. Brush the tops with the egg wash. Bake at 400F 15-18 mins, or until golden brown.  Drizzle the glaze over the toaster strudels. BLACK CHERRY CHEESECAKE TOASTER STRUDELS You canā€™t convince me that thereā€™s anything better šŸ¤Œ Recipe below OR go to my website through the link in my bio šŸ¤Ž #Recipe Details (makes 9): Ingredients: - 2 sheets puff pastry, thawed according to instructions @Pepperidge Farm  - 2/3 cup black cherry jam (or jam of choice) - 2 tsp cornstarch - 1 egg + 1 tbsp water, for egg wash - Turbinado sugar or coarse sugar of choice, for topping @In The Raw  Cream Cheese Filling: - 8oz cream cheese, at room temperature @Philly Cream Cheese  - 1/2 cup powdered sugar - 1 tsp vanilla extract Vanilla Bean Glaze: - 1 cupĀ powdered sugar - 1 tspĀ vanilla bean paste or extract - 2-3 tbsp milk of choice Instructions: Preheat the oven to 400F. Line a baking sheet with parchment paper and set aside.  Prepare the black cherry jam. In a medium bowl, whisk together the black cherry jam and cornstarch until well combined. Set aside. Start by preparing the cream cheese filling. In a large bowl, beat together the cream cheese, powdered sugar, and vanilla until light and fluffy. Transfer the mixture to a piping bag or a ziplock baggie with the corner snipped off. Set aside.  In a small bowl, whisk mix together the egg and water for the egg wash.  Assemble the toaster strudels. Lay both sheets of puff pastry on a lightly floured surface or piece of parchment paper. Cut each sheet into 9 rectangles/squares to get 18 total. Brush the rims of half (9) of the rectangles with the egg wash. Pipe ~1 1/2 tbsp of the cream cheese filling into the center of each rectangle with the egg wash. Then, spoon ~ 1 1/2 tbsp of the jam on top of the cream cheese filling, leaving ~1/4ā€ border all around the edges. Lay the remaining rectangles/squares of puff pastry on top of the ones with the filling. Use your fingers to gently press the edges down. Then, use a fork to crimp the edges to seal. Place the toaster strudels onto the prepared baking sheet. Lightly brush the top of each strudel with the egg wash, then sprinkle with turbinado/coarse sugar. Bake at 400F for 15-18 minutes, or until golden brown and puffed. Remove from the oven and cool for 10-15 minutes. While cooling, whisk together the ingredients for the vanilla bean glaze. This is like a gourmet toaster strudel! I got the recipe from @Rav.Eats! You will need puff pastry, cream cheese, one egg, strawberries, powdered sugar, and vanilla! Itā€™s super easy! Heat your oven to 400 and roll out your thawed pastry dough. Mix 3/4 of the cream cheese block, a half a cup of powdered sugar, and 1 tablespoon of vanilla. Once thatā€™s super creamy you will lay thatā€™ll slice strawberries on top. Then take one egg and 1 tablespoon of water mixed together for the egg wash and brush that onto the edges of the pastry. pop in the oven for 9 to 13 minutes. While that is in the oven, you will work on your icing. I used a half a cup of powdered sugar and a splash of milk and you just have to mix until you get to a thicker consistency, adding powdered sugar as you go.
