4 super ripe bananas 2 cups spinach 4 large eggs 2 tbsp cinnamon 1 tsp clove 1 cup white granulated sugar 3 cups gluten free flour 1 cup melted butter or 1/2 cup melted coconut oil and 1/2 cup melted butter 1 tbsp baking powder 2 tbsp vanilla paste optional: chopped walnuts using a blender or food processor, blend bananas, spinach, eggs, oil/butter, vanilla, and spices. Blend until spinach is well chopped and batter looks like a smoothie. in a separate bowl add flour, sugar and baking powder. fold in the liquid batter until we'll incorporated. add chocolate chips. scoop into cupcake liners and bake for 20 min @ 350F. allow to cool and enjoy!
