let’s make turkish stuffed onions aka soğan dolması 🇹🇷🧅 recipe — 4-5 large onions 1/2 pound ground beef 1 cup washed rice 1 tbsp tomato paste 3 grated tomatoes 2 garlic cloves, minced handful chopped parsley 1 tbsp pomegranate syrup 2 tbsp olive oil 2 tsp salt 1 tsp black pepper 1 tsp aleppo pepper 1 tsp sumac for the sauce: 1 tbsp tomato paste 1 cup water 1 tbsp butter salt instructions: 1. slice through the middle of each onion (vertically, just to the core) and peel the outer skin. boil the onions whole for 10-15 minutes until softened. let them cool, then carefully separate the layers. 2. mix the ground beef, rice, grated tomatoes, garlic, parsley, pomegranate syrup, olive oil, salt, and black pepper in a bowl. 3. take each onion layer, add a small amount of filling, roll gently, and place in a baking dish. 4. mix the tomato paste and water in a bowl, then pour it over the stuffed onions. place small pieces of butter on top. 5. place an oven-safe plate on top of the onions to weigh them down and keep them in place. bake at 375°f (190°c) for 45-50 minutes until the onions and rice are tender. 6. remove the plate after 30 minutes and bake uncovered. broil for the last 3 minutes to achieve a charred top (optional). 7. garnish with dried mint and fresh parsley. serve with a side of garlic yogurt. enjoy!
