Easy dinner idea: unstuffed pepper casserole by @Cailee Fischer * 1 lb ground Italian chicken * 1 tbsp avocado oil * 1 red bell pepper * 1 green bell pepper * 1 small yellow onion * 1 tbsp minced garlic * 1 cup rice (uncooked) * 1 can diced tomatoes (14oz) * 1 can tomato sauce (8oz) * 1 cup chicken stock * Seasonings: Italian seasoning; paprika, cumin, salt, pepper, garlic powder * 1-2 cups shredded cheddar cheese Dice up your peppers and onions. Add your choice of ground meat to an oven safe pan on medium heat with some oil. Cook until cooked through, 5-7 minutes. Once the chicken is cooked, add peppers and onions to sautéed form a 3-4 minutes. Add your rinsed uncooked rice to the pot with minced garlic. Mix and sautée for another minute or two. Add tomato sauce, diced tomatoes, and chicken broth, and seasonings. Simmer covered for 25 minutes or until rice is cooked. top with shredded cheese and put in the oven at 400 for 4 minutes. Optional: sour cream would elevate this! Serve and enjoy.
