Everyone needs a great recipe for great cupcakes! Here is one of my favorites & a tutorial on making them from start to finish! This is a standard 1234 cake recipe and they really are delicious! 1 Cup Butter (room temp) 2 Cups Sugar 3 Cups Flour 4 Eggs (room temp) 1 Cup Whole Milk (room temp) 2 tsp Vanilla 1 T plus 1 tsp Baking Powder 1/2 tsp Salt Start by creaming the butter and sugar together for about 3 minutes, until fully incorporated & light and fluffy. Add one egg at a time, mixing each one completely. In a medium sized bowl, whisk together flour, baking powder & salt. Mix vanilla into the milk. Alternate adding the dry and wet ingredients, beginning and ending with dry. (1/3 dry, 1/2 milk, 1/3 dry, 1/2 milk, 1/3 dry-does NOT have to be exact measuring, this is just a guide!!) After each addition, only mix until it is just combined. Meaning, don’t let the mixer keep running while you prepare the next ingredient-turn it off as soon as your flour or milk has incorporated. As soon as liquid and flour are mixed, they begin to build gluten strands. The more you mix, the tighter those bonds become (like in kneading dough for bread you want very tight bonds). We don’t want to create tight bonds, we want super light fluffy cupcakes:) Fill your cupcake liners halfway and bake at 350 for about 20 minutes. Let them cool before decorating and enjoy!
