Obviously on chanukah we clebrate more than deep fried food, but sometimes that gets all the attention. Ingredients: 1 medium grated rutabaga 1 zuchinni grated 1 carrot grated 1/2 cup chickpea flour (or flour of your choice) 1 egg 1/4 tsp each of salt, pepper, garlic powder, and oregano Instructions: Line baking sheet with parchment paper. Spray with oil. Preheat oven 375°F. Add veggies into a cheese cloth or dish towel and wqueeze out the liquid. Add into a bowl with all other ingredients. Form into latkas. Add to baking sheet. Soray oil on top and bake for 15-20 minutes.
