Spaghetti & White Clam Sauce with my pantry staples This meal is beyond easy to make–it takes less than 30 minutes and it’s perfect if you’re looking for a quick (but elevated) weeknight meal. My mom has been making this dish for as long as I can remember and it was my favorite meal she made when I was a kid, so shoutout to her for the recipe! Ingredients: (2 servings) - 2 servings of pasta (I used angel hair but any spaghetti works) - 3 cans of chopped clams - 1 cup yellow onions, finely chopped - 2 garlic cloves, minced - 1/3 cup white wine (I used Pinot Grigio) - 1/4 cup pecorino romano cheese, grated (or parmesan) - pepper, to taste Directions: 1. On medium heat, sauté chopped onions in olive oil for 4 minutes. Add the garlic and sauté for 1 minute. 2. Add white wine and let it cook down for a minute or so. 3. Add the clams with their juices, pepper, and grated cheese. 4. Simmer for 15 minutes, until the mixture thickens. 5. Serve over pasta and enjoy! #pantrycleanout #weeknightdinner #pastarecipe

Chicken Ramen Stir Fry // I love making “egg roll in a bowl” on busy week nights, but adding ramen noodles makes for a heartier dish that satisfies my hungry  husband and the kids love too! So easy and comes together in under 20 minutes, it’s a weeknight win meal. 🌟 #Recipe  1 lb ground chicken  1 small onion, chopped 1 tbsp avocado oil  1 tsp sesame oil  16 oz coleslaw mix or shredded cabbage 6 oz ramen noodles  Salt and pepper, to taste  Sauce: 1/3 cup soy sauce or coconut aminos  1 tbsp honey 1 tbsp rice vinegar 1 clove garlic, minced  1 tsp. sriracha (optional)  For sauce: Whisk together soy sauce, honey, vinegar, and garlic and sriracha. Set aside.  In a large skillet over medium heat, heat oils. Add onions and cook until just tender. Add the ground chicken, season with salt and pepper, and cook until brown and cooked through. Add the coleslaw mix and continue to cook until cabbage is softened about 5 minutes.  In a medium saucepan, bring water to a boil. Add ramen noodles and cook until tender, 2 minutes. Drain. Add cooked ramen noodles to skillet and pour over sauce. Toss until completely combined. INGREDIENTS:  - 1 medium sized white onion  - 1 pound of ground beef  - 7-8 Tortillas (I’m using @Siete Foods )  - Olive oil for cooking  - 3-4 cloves garlic (minced)  - 1/2 tsp ground cumin  - 1/2 tsp onion powder  - 1/2 tsp oregano  - 1/2 tsp smoked paprika  - 1/2 tsp chili powder  - 1 tbsp tomato paste  - salt + pepper  CHIPOTLE CREMA:  - 2-3 tbsps sour cream (I’m using dairy free @Forager Project)  - 1/4 tsp chipotle powder - Splash of water *you can also add lime juice if you wanna get crazy with it !!  TOPPINGS: (whatever your heart desires)   - Diced Roma tomato  - Shredded lettuce  - Cilantro  - Chipotle crema (listed above)  INSTRUCTIONS:  - Start by preheating your oven to 400. - Dice your white onion, set aside for now.  - In a skillet over medium heat, add a splash of olive oil. Add in your diced onion and stir until just softened (2-3 minutes)  - Add your ground beef into the same pan. Break it up til it’s brown you know the drill.  - Once it’s about halfway browned, season generously with salt and pepper. Add in your minced garlic. Mix mix mix  - Then add your cumin, onion powder, oregano, smoked paprika, chili powder and tomato paste. Mix mix mix  - When the meat is fully browned and the seasonings are well combined, remove from heat, cover and set aside for now.  - In a small skillet over medium heat, add a splash of olive oil. Heat up your tortillas about 20-30 seconds per side, or until they are fully softened. - Line your pan with parchment paper, add your tortilla to the pan, fill with our meat mixture. Then fold tortilla over and press down ~5 seconds. Repeat that until you run out of tortillas and meat.  - Then pop em in the oven for 10-12 minutes.  - While those bake, I prepped all my toppings. Sharing below and in this week’s newsletter:  Lasagna Soup Ingredients:  	•	2 tbsp olive oil 	•	1 yellow onion, diced 	•	3 cloves garlic, chopped 	•	3 tbsp tomato paste 	•	1 lb ground beef 	•	32oz jar Marinara  	•	32oz beef broth 	•	1/2 tbsp red pepper flakes (or to taste) 	•	1 cup ricotta cheese 	•	1 cup heavy cream (if omitting, just add more beef broth)  	•	1 box lasagna sheets (not the “oven ready” kind) 	•	1/2 cup mozzarella cheese (shredded or pearl) 	•	1/4 cup shredded parmesan cheese 	•	Salt and pepper to taste  Instructions: In a dutch oven or large pot, heat up olive oil over medium heat. Sauté onions until translucent, adding garlic halfway. Season with salt and pepper and add the red pepper flake. Add tomato paste and cook for an additional 3-5 minutes. Add ground beef to brown, breaking up into small pieces. Season with more salt to taste.  Once the beef is browned but not yet cooked through, add marinara and beef broth and stir until combined. Add ricotta, and heavy cream, bringing heat to medium high until a slow rolling boil is reached. Be sure to continue stirring so the beef doesn’t overcook at the bottom of the pot. Next, break up lasagna sheets into bite-sized pieces and allow to cook in the soup until al dente (about 10-12 minutes) Once the pasta is adequately cooked, add in mozzarella and parmesan and stir so they melt in.
