High-protein, low-calorie Chicken Alfredo meal prep! 🍝🔥 Perfect for staying on track with your fitness goals while enjoying a creamy, flavorful dish. 💪✨  Ingredients (for 5 servings): * 2 lbs cubed chicken * 9.5 oz Barilla protein angel hair pasta (dry) * 250 ml 2% evaporated milk * 40 g low moisture mozzarella * 50 g shredded Parmesan * 100 ml chicken stock * 1/2 white onion, chopped * 4 cloves garlic, chopped * Seasonings: Italian seasoning, lemon pepper, garlic powder, Cajun seasoning, paprika (to taste) * 100 g 1/3 reduced fat cream cheese Instructions: 1. Cook the Pasta: In a large pot, cook the Barilla protein angel hair pasta according to package directions. Drain and set aside, reserving a little pasta water. 2. Cook the Chicken: In a large skillet, heat some oil over medium-high heat. Season the cubed chicken with Cajun seasoning, paprika, lemon pepper, garlic powder, and Italian seasoning. Cook until the chicken is browned and fully cooked, about 7-10 minutes. Remove the chicken and set aside. 3. Sauté the Onions and Garlic: In the same skillet, add a little more oil if needed. Sauté the chopped onion and garlic until softened, about 3-4 minutes. 4. Make the Sauce: To the onions and garlic, add the evaporated milk, chicken stock, and cream cheese. Stir until the cream cheese melts and the mixture becomes smooth. Let it simmer for 3-5 minutes to thicken slightly. 5. Add the Cheese: Stir in the shredded Parmesan and mozzarella. Let the cheeses melt into the sauce, stirring occasionally. 6. Combine Chicken and Pasta: Add the cooked chicken back into the sauce, followed by the cooked pasta. A little shrimp and pasta primavera for dinner. Olive oil pan and sauce garlic and one shallot diced. Salt and pepper your shrimp and toss to make sure it’s fully seasoned. Throw In a cup of cherry tomatoes. While cooking blanch asparagus in salt water for about 3 minutes. Add to your pan once done. Cook your pasta according to packaging ( I used Banza Chickpea pasta). Once shrimp and veggies cooked through, set aside. Take 1/4 c chicken broth, mix in 1/2 cup milk (I used almond) 1 cup Parmesan cheese and salt and pepper. Whisk until cheese is melted. Recipe--> 🍲🥫✨ It snowed for three days straight, so a big pot of soup was on my mind 😌  This Tuscan white bean soup is a comfort healthy dinner that will warm you right up. Best part is you will have lots of leftovers (trust me you're going to want them)!  Can also be made vegetarian by doubling the beans and omitting the chicken!  Ingredients: -olive oil -1 white onion diced -6 cloves of garlic finely chopped -3 carrots diced -4 c cooked chicken (I used rotisserie for convenience!) -14oz can of cannellinni beans -14oz can diced seasoned tomatoes -32 oz low sodium chicken broth -2 c water -2 c brown quick rice (if using different rice, you will need to cook soup longer) -4 c kale de-stemmed and chopped -salt & pepper -1 bay leaf -Itailian seasoning  optional: -shredded parm  -crackers Steps: 1. In a large pot with 2 tbsp olive oil, add onions, garlic, & carrots and season with Italian seasoning, salt & pepper. Cook for 3-4 minutes stirring regularly until onions start to become translucent. 2. Add beans, diced tomatoes, chicken, bay leaf, broth & water and bring to boil 3. Once boiling, add rice and lower heat to simmer. Let cook for 10 minutes 4. After 10 minutes, add kale and let cook for another 3-4 minutes  5. One way I have been successful on my weight loss journey is by finding ways to still eat my favorite foods through ingredient swaps!  If I made this 2 years ago, I would have used 2 containers of biscuits, thick cut bacon, half & half, and full fat cheese.
