Replying to @AKM_C06  Shepards pie with picadillo for the beef. It’s like a deconstructed papa rellena with the crispy topping of the potato but fluffy interior/flavor inside. Recipe below ⬇️ Picadillo:  1.5 lb ground beef  1/2 onion  1/2 red pepper  1/2 green pepper  2 tbsp Sofrito (recipe on page) 2 garlic cloves  1/4 c tomato sauce  2 tsp Sazon  1 tsp Sazon complete  1 tsp garlic  1/2 tsp onion powder  1/8-1/4 tsp cumin  2 bay leaves  1/4 c water or 1/2 c wine  1 l-2 tbsp guava paste  4 olives 1 tsp olive juice  2 tsp white wine vinegar  1/4 tsp adobo  Small bunch cilantro  Salt and pepper to taste  Directions:  Saute onions, peppers, until soft. Them add sofrito and garlic. Add a splash of wine (optional) then add tomato sauce and seasonings. Cook a few minutes until tomato sauce turns a deeper red color. Add ground beef and cook. Once cooked add water, bay leaves, guava paste, olives, olive juice, white wine vinegar, cilantro, salt and pepper to taste. Cover and cook on low heat 5-10 minutes. Mashed potatoes:  Ingredients  4 russet potatoes (peeled, cut into 1 inch cubes) 5 tbsp unsalted butter  1 c heavy cream  1/4 c creme fraiche or sour cream  4 pressed garlic cloves  2 egg yolks Pinch of thyme (optional)  Garlic powder, to taste.  Salt and pepper to taste.  Directions:  Cover potatoes in cold salted water. Boil until fork tender.  Drain potatoes *Important step* press the potatoes through a sieve or potato ricer in batches. This will help ensure you have creamy, fluffy mashed potato’s. Then add heavy cream, butter, garlic, thyme, to a small pot. Bring to a light simmer. Make sure it doesn’t boil over. And add that to your mashed potatoes. It’s important the heavy cream is warm so the potatoes come out fluffy and not gluey. Then add creme fraiche or sour cream. Season with salt, pepper, and garlic powder to taste.  When it tastes to your liking add the two egg yolks and mix in.  Assembling the Shepards pie:  Add your beef picadillo to the bottom of a pan. Then top with mashed potatoes. Use a fork to make a design on top. Bake at 350 degrees for 35 minutes. You can broil add the end if you want the top a little more golden and crispy.
