⬇️⬇️⬇️⬇️⬇️Ingredients 200g flour 200g granulated sugar 80g cocoa powder 20g baking powder Pinch of salt 2 eggs or 3 small 2 tbsp vanilla extract 2 tbsp ground coffee 190g plain Greek yogurt 120g neutral oil 120g whole milk 150g dark chocolate chunks 150g milk chocolate chunks 2 cups chocolate ganache Instructions Preheat oven to 220°C. Line a muffin tin with parchment squares. In a bowl, whisk eggs, yogurt, oil, milk, and vanilla. Add sugar and mix well. Sift in flour, cocoa powder, baking powder, and salt. Fold into the wet ingredients using a spatula. The batter will be thick. Stir in the chocolate chunks, reserving some for topping. Spoon batter into the muffin tin and top with reserved chocolate chunks. Bake at 220°C for 5 minutes, then reduce to 170°C and bake for 15–16 minutes, until a toothpick comes out clean. Let cool slightly. Fill a piping bag with ganache, poke the muffins, and fill the center. Enjoy!
