We’re little backing that big back this year, so welcome back to the second episode of Meal Preps, But Vietnamese, where I show you how to make Vietnamese-inspired meal preps to help get you on track to start the year. Today, we’re making a hybrid Vietnamese/French dish called Nui Xao Bo/Stir-Fried Beef and Macaroni. This is a super quick and easy meal that is both comforting and hearty! Before we jump into the recipe, I do want to point out that my own personal goal is just to eat at a caloric deficit, while still enjoying the foods that I usually eat to make it sustainable in the long run for me. There are some easy adjustments or substitutions you can make to this base recipe to better fit your own goals and lifestyle! Healthier options include subbing out the rice macaroni for whole wheat pasta, changing the oils, or using a higher quality of beef that doesn’t require velveting.
