Baby Led Weaning Meals my 8 month old ate while I was off from work on Christmas Break! I love to cook and while I was off from work for two weeks I leaned into the aesthetic baby led weaning meals  I could prepare for my daughter. Here are some of my favorite recipes we’ve tried:  Lydia’s Snow day waffles:  -1 cup bisquick mix -½ cup whole milk (or breastmilk/formula) -1 egg -1 tbs olive oil -1 tbs plain greek yogurt  -4 chopped strawberries  -6 chopped blueberries  -1 tbs alcohol free vanilla  -sprinkle of cinnamon -sprinkle of hemp seed hearts -sprinkle of chia seeds -sprinkle of milled flaxseed -mix to thick ribbon consistency  -cook in waffle iron Lydia’s Veggie Home fries  -chopped potatoes  -chopped carrot -diced onion -diced bell pepper  -in a pan with olive oil saute on medium heat until golden brown and fork tender Lydia’s blueberry jam -in a pan on low heat add blueberries, cover just barely with water, bring to a boil and mash. Continue to simmer to reduce to jammy consistency. (stores in fridge for 3-4 days)  Lydia’s Chicken Stir-fry  Low Sodium Stir Fry Sauce:  -½ cup coconut aminos  -½ cup water (or chicken stock) -garlic powder to taste -ground ginger to taste -black pepper to taste  -1 tablespoon cornstarch to thicken  The Vegetables:  -steam broccoli, carrots, peppers, onion, mushrooms until fork tender -put aside for later The Chicken:  -cut boneless, skinless chicken thighs into strips. -pat dry, coat in no-salt herb seasoning -in a pan with avocado oil on medium heat brown on both sides.  -add vegetables  -add stir fry sauce and toss until everything is coated and sauce thickens and chicken is cooked thoroughly  Sauerkraut Eggy Bites:  -6 eggs  -splash of milk -1 cup finely diced sauerkraut -garlic powder to taste -onion powder to taste -italian herbs to taste -pour mixture into well greased mini muffin tin, bake at 350 degrees for 15mins or until cooked through.
