Baked Italian Cod with Cherry Tomatoes, Olives and Calabrian Peppers- so much flavor in a one dish wonder Ingredients: 4 Cod Filets 12 oz cherry/grape tomatoes 1/2 cup @bonodisiciliausa Castelvetrano olives 1 whole spring red onion 1 tbs @bonodisiciliausa Calabrese peppers 1/4 cup olive oil 1 tsp oregano 3-4 thyme sprigs 3 garlic cloves, crushed 2 tsp salt Back pepper, to taste 1/4 cup white wine Grilled lemon, for garnish Basil leaves, for garnish Method: 1. Preheat oven at 450 F; 2. Add tomatoes, sliced spring red onion, garlic, oregano, olive oil, Calabrian chili pepper, salt and pepper to a baking dish and mix well; roast for about 20 minutes; 3. Once veggies have softened, add wine; season Cod filets with olive oil, salt and pepper and nest them into the veggies; 4. Roast for another 12 minutes until bubbly and enjoy with some lemon!
