So here’s a treat you should make yours! Jessica’s favorite Brown Butter Raspberry and Lemon Bars Dessert Serves 8-12 Prep:15 minutes total 45mins (plus 20minutes to let it cool) Ingredients: Equipment : tart pan, pie dish or baking dish Ingredients: Crust: * 2 sticks (½ pound) (227g) * 2c all-purpose flour (250g) * 1/2c powdered sugar (50g) Filling: * 1c granulated sugar (201g) * 1c powdered sugar (120g) * 1 tsp baking powder (4g) * 5-6 tbsp all-purpose flour (54g) * A pinch of salt * The zest and juice from two large lemons (40g) * 4 large eggs (240g) * 1 small package of fresh raspberries (170g) * Garnish with crushed dried raspberries and more powdered sugar Tip: make sure your pan is greased well so it comes out easily if using a tart dish! 1. Set oven to 350 degrees 2. Begin by browning the butter in a small pan over low to medium heat, about 5-8 minutes. Remove from heat and cool for 3-4 minutes. To a medium bowl add the crust ingredients and the butter and mix until a soft dough comes together. Press into the bottom of a tart pan or casserole dish. Bake for 10-15 minutes. 4. While that bakes pour all dry filling into a large bowl, whisk together the wet ingredients in a separate medium bowl then add and mix until it feels like a thick soup, 6. fold in the berries and pour over the baked crust. 8. Bake for another 25-30 minutes it should be a golden crust on top. 10. Let cool for 20 minutes, Remove from the tart pan if using, and garnish with the raspberry and powdered sugar. Enjoy!
