In a large stockpot over medium heat melt 2 Tbsp butter. Add diced onion and cook until soft. About 4-5 minutes. Add garlic, salt, pepper, smoked paprika, mustard powder, and cayenne and cook until fragrant. About 30 seconds. Spoon into a bowl and set aside. 2. Return the pan to the heat and melt the remaining butter. Sprinkle flour over the top and stir constantly for about 3-4 minutes to cook out the flour. 3. Slowly whisk in the chicken broth into the roux, followed by the Carnation Evaporated Milk. Turn the heat down to low and cook for about 15 minutes, stirring occasionally, until slightly thickened. Add the onion mixture back into the pot, broccoli, and carrots. Cover and allow the soup to simmer for 20 minutes on low while opening the lid and stirring occasionally. 4. Stir in most of the cheddar cheese reserving some for serving. Ladle the soup into bowls. Top with the reserved cheese and serve with crust bread for the perfect comfort meal!
