FOR THE EGG BAKE: -1 sheet puff pastry dough -10 bag of frozen mixed root veggies (mine are from Costco) -8-10 breakfast sausage links -8 eggs with a splash of milk and salt & pepper to taste -1/4 cup-ish feta cheese -cook veggies & sausage -in greased round dish, add puff pastry, veggie/sausage mix, and scrambled eggs. top with feta cheese -bake at 375F for 20-30 minutes or unitl center is cooked through FOR THE CHIPOTLE BOWLS: - I cooked a rice/quinoa blend in my instapot -grilled 6 chicken thighs with taco seasoning on the Traeger about 25-30 min at 350F or unitl the inside reaches 165F, then diced up -and roasted sliced peppers and onions with salt, pepper, and olive oil at 425 for way too long and they burnt hahaha. You should be good with 15-20 min -assemble bowls and keep in fridge -when ready to eat, heat up in microwave 2-3 minutes, stirring halfway -add toppings like: cilantro, lettuce, tomatoes, guac, sour cream or greek yogurt, and Monterey jack cheese (same cheese chipotle uses) FOR THE PUMPKIN OATMEAL: comment "pumpkin" and I'll send you the website link with the recipe I used!
