Ingredients: 1 lb ground beef 1/4 cup diced onion 1 tsp salt 1/2 tsp black pepper 1 tsp garlic powder 1/2 tsp cumin 3 tbsp Sofrito with tomato 1 cup beef broth 1 tsp chopped cilantro 1 cup Cabot Vermont Shredded Cheddar Cheese 16-18 empanada wrappers In a pan, cook ground beef over medium heat until browned. Drain excess fat. Add onions, salt, pepper, garlic powder, cumin and sofrito with tomato. Sauté for 2 minutes. Stir in beef broth. Simmer until thickened, then mix in cilantro. Let cool. Place filling in the center of each empanada wrapper. Top with shredded cheese. Brush edge with water and then fold. Seal edges with a fork. Fry until golden brown or bake at 375°F for 20-25 minutes.
