#24: PROTEIN DATE CARAMEL APPLES π Iβve perfected my date caramel recipe by adding extra protein to help keep you satiated, while the fiber in the apple & dates keep your blood sugar stabilized. This makes for a delicious & nutritious sweet treat that you can also pair with my fruit dip for the yummiest sweet treat! This oneβs SO good π RECIPE BELOW π INGREDIENTS: -10 medjool dates, pitted -1 teaspoon vanilla extract -pinch of salt -3-4 TBSP of collagen or protein powder (@vitalproteins @cleansimpleeats) -apple of choice (my favs are granny smith and honeycrisp) -toppings of choice (I love @lilys_sweets sugar free chocolate and nuts but have fun with it!) -Optional to add a skewer but if you donβt have one, you can slice the apple instead (or Iβve used a butter knife before, not aesthetic but hey it works) HOW TO: -soak pitted dates for 20 mins or until really soft and tender (save the date water) -once soft, place dates in a blender with vanilla extract, salt, collagen and about 1 TBSP of the date water. If you want really smooth caramel, remove some of the skin. They will naturally start to fall off when soaked. You only want to add enough liquid to allow the dates to blend, so try to add as little as possible. This will help the caramel become thick and not too watery. I find myself sometimes needing to scrape down the sides if it gets stuck, before automatically just adding more liquid. -blend until smooth, and place in the freezer for about 30 mins to set up (it should get thicker the longer it sits) -Wash and dry apple completely. The caramel will not stick if the apple is wet (keep this in mind if the apple is in the fridge and cold, you need to make sure itβs completely dry) -Once caramel has thickened, remove from freezer and rub it on the apple to coat it. -add toppings and enjoy! NOTES: if you notice the toppings or caramel not sticking, you can place them in the freezer for a few mins or fridge for longer. The key is making sure your caramel is thick to begin with (reference the texture of mine in the video for a visual!)
