Carrots, and the bell pepper have a high vitamin A content. Vitamin A, protect skin cells from damage by free radicals, which can help slow cellular aging, it also increases collagen production. Vitamin A has been shown to help exfoliate dead skin cells and increase skin cell turnover, which is what retinol does, because retinol is basically a super strong form of vitamin A. This means A is a great vitamin for helping acne and hyperpigmentation.  Now both the carrots , pepper, and leeks have a high beta carotene content. Medicare and teen is an antioxidant that helps neutralize free radicals, and reduce oxidative damage it’s been shown to help improve the skin tone and texture, and reduce the appearance of wrinkles and age spots  Carrots are also high in fiber and contain photo estrogen, which may help balance, hormones, and blood sugar levels and those are two things that were increasing my acne.  Overall this is a YUMMY soup. You can add more garlic or onions or spices and personalize it to your liking. I recently made a three ingredient zucchini soup that was really easy to make and delicious and it started thinking about what other vegetables I could use to make a similar type of soup. Carrots was one of the first thing that came to mine because they’re just naturally sweet and creamy and blended so I thought that would be perfect and the soup actually came out better than I expected, it is three main ingredients and then a couple of extra optional ingredients. My only regret is that I didn’t make a bigger pot. 🌱Magic carrot Soup(only 3 ingredients 🌱 Ingredients 1 cup raw cashews 3 cups vegetable stock 6 carrots, peeled and chopped Additional optional ingredients: sea salt & pepper 1inch knob of ginger, grated 1/4 cup nutritional yeast Hemp seeds#cilantro Splash of olive oil Instructions Add the cashews, stock and Carrots in to a medium stock pot over medium heat and bring up to a simmer. Add the ginger and /or nutritional yeast if using Reduce heat to low and cook for 20-25 minutes or until the cashews are tender and break between your fingers. • Remove from the heat and carefully transfer the soup to a blender or use a hand blender . Season with salt and pepper Blend until the soup is completely smooth to serve. This Creamy Roasted Carrot Soup is my new favorite thing! You might hear "carrot soup" and think it sounds kind of boring. But not the way we're making it today! We are throwing in lots of fresh ginger for some brightness and red curry paste brings all the flavor. Coconut milk makes this super creamy. It is a simple veggie soup that has SO, MUCH, FLAVOR! 1.5 pounds carrots peeled and cut in 2" pieces
6-8 cloves garlic peeled
1 yellow onion quartered
2 tablespoons oil I used avocado oil
salt & pepper to taste
1 inch fresh ginger peeled
4 cups broth I used vegan chicken broth
2 tablespoons red curry paste
1 15-ounce can coconut milk
1 lime juiced
