Manchego Crusted Potatoes & Spicy Roasted Garlic Ajonesa (very similar to aioli).   Ingredients:  ● 6 small yukon gold potatoes. ● 8 oz grated aged manchego. ● 1/4 cup extra virgin olive oil from Spain  ● 1/2 tbsp smoked paprika. ● seasoned salt to taste.  Roasted garlic ajonesa: 3/4 cup + 1 tbsp extra virgin olive oil. 1 egg. 1 garlic head. 1 tsp chipotle powder. 1/4 tsp seasoned salt. tiny squeeze lemon.  Directions:  1. Slice the top off the garlic head. Drizzle 1 tbsp of olive oil on it and add some salt. 2. Roast at 400F for 45 min. 3. For the aioli, add the egg, chipotle powder, lemon drizzle, salt and garlic head to a flat bottomed container. Add HALF of the olive oil on top, make sure you add this at the very end. Add your immersion blender and turn it on, don’t move the immersion blender until it is fully emulsify. Tilt it gently towards the top, once whe bottom is emulsified. 4. Transfer to a bowl, and gently whisk in the rest of the oil and watch it thicken! 5. Mix together the olive oil, paprika and seasoned salt. 6. Slice your potatoes by half. Score them. 7. Add the potatoes to the seasoned olive oil and get them all mixed in. 8. Coat the potatoes scored side down onto the manchego until they are fully covered in it. 9. Place the potatoes cheese side down on a parchment paper lined sheetpan. 10. Bake at 400F for 22-25 min. 11. Add the diced onion and garlic, cooking until softened (about 3–4 minutes). •	Sprinkle in the flour, whisking to combine, and cook for another 2 minutes. •	Reduce the heat to low and slowly whisk in the chicken broth. Gradually add the milk while continuing to whisk. •	Increase the heat to medium, stirring constantly until the mixture comes to a boil and thickens. Season with salt and pepper to taste. •	Remove from heat and stir in the grated cheddar cheese until fully melted. 3.	Assemble the Dish •	Arrange half of the sliced potatoes in a single layer in the prepared pan. Season lightly with salt and pepper. •	Pour half of the cheese sauce evenly over the potatoes. •	Layer the remaining potatoes on top, season again with salt and pepper, and pour the rest of the sauce over them. 4.	Bake the Potatoes •	Cover the dish with foil and bake for 45 minutes. •	Remove the foil and bake for another 30–40 minutes, or until the potatoes are tender and golden on top. 5. Cooking up more content to share soon!  ✨Creamy Havarti Au Gratin Potatoes✨ i could eat this everyday and be sooo happy 3.5 pounds potatoes - Idaho or Yukon for softer/sweeter - peeled + thinly sliced 3 cups shredded Havarti cheese 6 Tbsp all purpose flour 2 Tbsp chicken bouillon granules 3 cups heavy whipping cream Fresh ground pepper to taste Instructions: Heat oven to 400 degrees. Spray 9x13 dish with nonstick cooking spray. Arrange ⅓ of potatoes in dish. Sprinkle ⅓ of bouillon and pepper to taste. Sprinkle ⅓ shredded cheese and 2 Tbsp flour. Continue adding 2-3 more layers depending on the thickness of potatoes. Pour 3 cups of heavy cream evenly over potatoes. Bake 60 minutes or until the top is golden brown and potatoes are tender.
