THE BEST CHICKEN TORTILLA SOUP 🥣 Ingredients: 32 oz. chicken broth 2 C shredded chicken (rotisserie chicken works great too!) 1 medium onion, diced 3 cloves garlic, minced (or 1 tsp. jarred minced garlic) 1 can corn, drained 1 can reduced sodium black beans, drained and rinsed 1 can diced tomatoes 1 TBSP. olive oil 1 tsp. ground cumin 1 tsp. chili powder 1/2 C cilantro, chopped Pepper to taste Juice of 1 lime Directions: 1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and garlic, and cook until soft and translucent, about 5 minutes. 2. Pour in the chicken broth, canned tomatoes, black beans, corn, cumin and chili powder. Stir to combine and bring to a simmer. 3. Add the cooked shredded chicken. Let the soup simmer for 10-15 minutes, allowing all the flavors to meld together. 4. Season with pepper (if needed), and lime juice to taste. Stir in the chopped cilantro just before serving. 5. Ladle the soup into bowls. Top with crispy tortilla strips and any additional toppings you like, such as diced avocado, sour cream, shredded cheese, or a sprinkle of fresh cilantro.
