This was a first for me using this cut… and I’m Hooked!!  What should I make next using the Santa Maria?! One of my favorite parts of my @FYRSTARTER Grill is the Santa Maria Attachment. I’ve never had access to one, and learning something new while cooking with live fire is a major passion of mine!  Like I mentioned in the video, this method uses a specific type of grill that utilizes an adjustable grate. Typically a hand crank system, but I’ve seen others.  You control the heat by using the adjustable grill grate to manage the distance from the fire.  For this Tri-Tip, I used FYR RED Hot sauce as a binder and seasoned it up with @chilesandsmoke Canyon Crust and @Al Frugoni Chimichurri.  Then I cooked it over @Jealous Devil charcoal with some wood chunks for extra flavor!  The cook time varies, but usually 10-20 mins for this cut! I tend to run mine at a little lower temp early to take on more smoke until it reaches an internal of 110-115°, and then sear it hot and fast at the end! Do not cook to a time, and until you get comfortable managing the feel of cooking with live fire, don’t be too proud to use a thermometer! It just helps ensure a perfect cook! I picked up a couple of really good looking skirt steaks from @marbledmt and I have been looking for some great ways to cook them.  I landed on this recipe, which is a riff on two Cuban style sandwiches. It’s a mojo marinaded steak (traditionally a Cubano is made with mojo marinated pork) and a Pan Con Bistec, which is a steak sandwich with caramelized onions and potato sticks. Both of these sandwiches are pretty common in cafes and restaurants throughout Miami and combined- it rocks.  The #skirtsteak from @marbledmt made this recipe really pop. The #steaks were thick and juicy and had a bunch of really great marbling throughout the whole piece of meat.
