This sauce is so good I made it 3 times last week. It’s super versatile and you can put it on anything. Recently, I’ve been making a huge batch of this to eat with my chicken and rice meal preps. I also made this on Christmas day to pair with the crispy pork belly I made (see previous post) and some steak my mom made and my family crushed it. Ingredients: 3 limes 4 tbsp sugar 6 thai chili peppers 7 garlic cloves 6 tbsp fish sauce 1 bunch cilantro (finely chopped) 1 shallot (finely chopped) Instructions: 1. In a mortar pestle, add 2 tbsp sugar, 7 garlic cloves, 6 thai chili peppers and grind into a fine paste (If you don’t have a mortar and pestle, you can finely mince/chop everything by hand) 2. Then add the rest of the sugar, juice of 3 limes, 6 tbsp fish sauce, 1 bunch cilantro (finely chopped), 1 shallot (finely chopped) 3. Enjoy the sauce with eggs, any protein, rice, spring rolls, etc... It’s good on everything!
