Recipe 2 of my airfryer series: flaky, crispy salmon with cilantro lime rice and mango salsa Ingredients: - 2 salmon fillets - 1 tsp smoked paprika - 1 tsp chili powder - 1 tsp ginger powder - 1 tsp onion powder - 1 tsp garlic powder - 1 tsp garlic salt - 1 tsp black pepper - 1 c rice - 2 cups water - 1 Maggi cube - Handful of cilantro - Juice from 2 limes (1 for mango salsa, 1 for rice) - ½ mango - 1 Roma tomato - ¼ red onion - 1 jalapeño - Salt to taste Steps: 1. Remove skin from salmon and both sides of chicken thighs with smoked paprika, chili powder, ginger powder, onion powder, garlic powder, garlic salt, and black pepper 2. Let marinate for at least one hour 3. Add salmon to airfryer and spray with oil 4. Airfry on 400F for 8-10 minutes 5. While salmon is in airfryer make your mango salsa by mixing together chopped up mango, red onion, roma tomato, cilantro, lime juice, jalapeño, and salt 6. To make your rice, wash rice until water runs clear and soak for ~20-30 minutes 7. Once rice has soaked, add olive oil to pot and add in your rice and let toast for 1-2 minutes 8. Combine 2 c hot water with 1 Maggi cube and add to rice 9. Once water starts to boil, cover and turn heat to low. Cook for 15 minutes 10. Once rice is cooked, remove from heat 11. Serve salmon over rice with mango salsa
