•Brioche Danishes• DOUGH: 2 Eggs  1/4 cup Sugar 1 TBSP Salt  1 cup Milk, lukewarm 1 TBSP Active Dry or Instant Yeast  12 TBSP Melted Butter, cooled  3 3/4 cups + 2 tbsp Flour, sifted then measured FILLING: 16 oz Cream Cheese 1/2 cup Milk 1 cup Powdered Sugar 1 tbsp vanilla bean paste TOPPINGS:  Frozen Wild Blueberries Guava Jam ICING:  1 1/2 cups powdered sugar 1/2 tsp vanilla 2-3 tbsp milk  Prepare the dough. In a stand mixer, using the whisk attachment, whisk the eggs, sugar, and salt. Warm the milk and mix the yeast into it. Slowly pour the mixture into the egg mixture. Continue whisking. Pour the melted butter, and continue whisking. Add half the flour and whisk until smooth. Remove the whisk and attach the dough hook. Add the rest of the flour and begin kneading the dough. At this point allow the dough to knead for at least 10 minutes, preferably 15. This will allow the gluten to develop and give you a smooth dough to work with. It will also create the perfect texture. Once the dough finishes kneading, cut it into 12 pieces and place on a greased cookie sheet and cover. Refrigerate it for at least 2 hours, or up to 2 days. After the dough has refrigerated for at least two hours, I like to roll it out with a small rolling pin into flat discs about 1/2 inch thick. Set in a warm place to rise. Meanwhile make the cream cheese mixture by adding everything to the bowl of a stand mixed and beating it with a paddle or whisk attachment. Set aside.  Once dough has rise , use your fingers to indent the center and leave a border of a crust around the middle. Stretch the dough and great about 6 inch danishes. Spread a generous amount of the cream cheese into the middle. Now get creative. Top with frozen fruit or swirl in a jam. My favorites have been wild blueberries or guava jam. Brush with an egg wash and bake at 375 F for about 12-14 min. Once they finish allow them to cool for a few minutes. Make an icing with powdered sugar, vanilla, and milk.
