WE MISSED YOU!!! 🫶🏽 A cozy winter indeed ❄️🤍.  - 🥘 Chicken & Wild Rice: ▪️2 lbs chicken thighs ▪️1 cup carrots, diced ▪️1 cup celery, diced ▪️1 cup onions, diced ▪️1 cup mushrooms ▪️1 cup wild rice, uncooked ▪️6 cups chicken broth ▪️1 can coconut milk ▪️2 tbsp minced garlic ▪️1 tbsp turmeric ▪️Salt to taste ▪️2 rosemary stems, diced ▪️2 sage stems, diced ▪️2 thyme stems, diced  ▪️2 tbsp avocado oil 👉🏽Sauté the onions, garlic, celery, and carrots until soft. Add mushrooms, sautéing for a couple more minutes. 👉🏽Season with salt and turmeric. 👉🏽Add wild rice, chicken broth, herbs, and chicken. 👉🏽slow cook on high for 4-6 hours. Let’s make some jollof rice with a Twist. This is a great recipe for the whole family and very easy to make. The spinach may make the food look so ugly but trust me, it taste super delicious 😋  Recipe 👌 • 1-2 cups rice • Meat of choice  • 1 Bag Spinach • 1 Bag Cilantro  • Carrot • Green Beans  • Fresh Tomatoes  • onions • 2-3pcs garlic gloves  1. Wash & season your Chicken breast. Skillet or cook, then keep aside 2. Add your Spinach & Cilantro in a blender. Add some water to make it easier to blend and blend to a fine texture  3. Cut all vegetables like carrot, green beans, tomatoes, onions etc 4. In a clean pot, drizzle some oil, add the onion and sautéed for 1-2mins, add some minced garlic, carrot, green beans, tomatoes and season to taste. I love seasonings like Curry powder, chicken cubes, adobo, parsley, ground pepper etc 5. Fry for 5-10mins and add the blended Spinach, add your washed rice and let cook for 20-30mins or until your rice is tender. Solid 30 minute family meal I made the other night. Cut about a pound of chicken breast into thin cutlets, season with salt + dried herbs and sear on both sides in extra virgin olive oil 5-6 minutes until cooked through. While the chicken is going make around 10oz’s of Orzo boiled in chicken stock. Once the chicken is done, deglaze with a little white wine and add around 250g of spinach and a couple handfuls of grape tomatoes sliced in half. Cook for 4-5 minutes. Add in minced garlic and cook for a couple minutes.  Stir in parsley, fresh basil, fresh oregano, a handful of pine nuts and a handful of Kalamata olives. Add some extra virgin olive oil and fresh black pepper. Add your orzo and chicken and combine. Optionally add some feta. Week 3 of 156 new recipes in 52 weeks brought us these recipes.
Main: broccoli cheese stuffed chicken breast. We over stuffed our chicken and had to omit some
Ingredients due to allergies. But overall everyone enjoyed it. Even super picky S ate some and said it wasn’t bad.

Bread: Pita bread. This recipe was quick easy not a lot of work and we enjoyed it. Half of us stuffed them with lunch meat, cheese, lettuce, tomato, olives and thousand island and enjoyed sandwiches. Will definitely keep this around as it’s so quick and good.

Dessert: homemade moon pies. Everyone loves this one, I did use bittersweet chocolate as the recipe calls for and I enjoyed it but some of the kids said they’d prefer semisweet instead but still ate it all. Definitely keeping this recipe around but it was a little bit of a process so don’t try it if you aren’t willing to spend some time and technique working on it.

For week 1 of recipes we’ve never made we started with
Main: Broccoli & carrot beef ramen, everyone loved this and keep requesting more. Recipe from the cozy cook, but we added carrots. 
Bread: cloud bread, overall we didn’t like it; aside J who enjoyed it. Recipe from theblogette
